|There’s a new chicken roast in town. We headed to the new Waldo’s Chicken & Beer in Cahaba Heights, the first Alabama location of a popular artisan chicken restaurant. Read on to find out what’s clucking.
All about Waldo’s chicken

This is Waldo’s Chicken’s first location in Alabama, but the restaurant has roots in Birmingham. According to Vestavia Voice, the original Waldo’s Chicken was founded in Tennessee two years ago by Mark Waldo, a Homewood native. Mark is the grandson of the late Dr. Frank Waldo, founder of the Mayfair Medical Group.
This August, Casey Atherton, a graduate of Spain Park, will bring Waldo’s Chicken to Cahaba Heights.
“I want to bring people to the table. I can’t wait to see parents and kids sitting here laughing, eating amazing food made from scratch with good music and Alabama, Auburn and UAB football on the TVs. Here’s what it is”.

Atherton told me that everything at Waldo’s is made from scratch – they don’t even have freezers! Waldo’s Chicken includes two styles of chicken: south-fried with buttermilk and topped breading or fire-roasted with a brown sugar brine and roasted with butter, garlic, and parsley.
Something that sets Waldo’s apart is that they use thighs – dark meat with a deep, rich flavor.
Here are some menu options:
- Hand-breaded southern fried chicken tenders with sauces
- The OG: Fried chicken sandwich with fried leg, pickles, lettuce + mayonnaise
- The Roost: Roast chicken, pickles + Alabama white sauce
- Chicken mouth: fried leg, habanero oil, cheddar, jalapeño slaw, mayonnaise + return sauce (Atherton’s favorite)
- Salads with fried chicken + rotisserie
- Cheddar Cookies with Honey Butter
- Scratched sides like mac and cheese
In addition to the food menu, you can choose from over 20 beers, including many local options.

Welcome to Cahaba Heights!

When I asked Atherton why he had chosen to return to Birmingham and take Waldo with him, he got a resounding response: Birmingham is home.
“It’s a great, tight-knit community in the heart of the Birmingham suburbs. We couldn’t be more excited to be in Cahaba Heights and lay our foundation in Birmingham. “
