UH Maui College’s Paina Market is a well-kept “lunch secret.”

A small but mighty World Plate class from the University of Hawaii Maui College Culinary Arts program prepares dishes at the newly renovated Paina Market. In addition to the UHMC ʻohana, the cafeteria is also open to the public.

Some of the foods offered include:

  • Chicken piccata topped with garlic, oven-roasted tomatoes and caprese (tomatoes, mozzarella and basil) with broccolini.
  • Eggplant Parmesan served with Marinara Sauce, Kale Caesar Salad and Penne Pasta with Garlic Bread.

“It might look like an expensive restaurant menu item. But these full lunches are only $10 each,” and are just two examples of the latest menu offerings at the redesigned Pā’ina Market, according to program administrators.

“We’re all excited to be fully open again,” said chef instructor Noel Cleary. “The students are very motivated.”

There is also a full salad bar, soup and hot dishes such as teriyaki chicken, stir-fried vegetables and rice. Other options include the Campus Café for burgers. Pastry products prepared by bakery students are offered near the cash register.

Chef Craig Omori, Culinary Arts Program Coordinator, said, “In addition to the designs and concepts from our very own Mark Antosh (UHMC Graphic Artist) and Bonnie Friedman (UHMC PR Specialist), we were very fortunate to have local artist Donald Shamblin volunteer his time. making really beautiful chalkboard art. It’s a great time for people in our community to come and check out the exciting things our faculty and students are doing.”

“I’ve been coming here since about 2005,” said pro golfer Bradley Bowen, who was at the World Plate lunch last week. “I’m glad he’s back. I enjoy the atmosphere and trust that I am getting good, clean, well-cooked food. I think this program is great and worth supporting.”

Paina Bazaar opening hours are Monday to Thursday from 11:00 am to 12:50 pm. It is closed on Fridays and UH holidays.

World Plate offers Mediterranean-inspired cuisine through Thursday, September 22; Southeast Asian-inspired dishes are on the menu until Monday, October 10.

The class will move from World Plate to Paniolo Grill next week and prepare gourmet sandwiches and salads to order beginning Tuesday, Oct. 18.

Paniolo Grill will be open during regular Pā’ina Market hours from Tuesday, Dec. 6, the last day of service this semester.
