Town Restaurant at Fullerton Hotel – Possibly the most luxurious seafood buffet in Singapore!

Here’s how we did it. We started our feast with the excellent ‘Chef’s Special’, sea urchins in the shell with Nomad caviar, soft roasted cauliflower and ponzu wafu. This tasted great, and since it’s rare to see such premium ingredients at a buffet dinner, our expectations for the rest of the meal were immediately heightened (spoiler: we weren’t disappointed). We went to our all-time favorite stop: Seafood on Ice.

We love fresh, juicy and succulent seafood as much as you do, and Town Restaurant’s selection is generous in both quality and variety. Expect Boston lobster, fresh shrimp, crab, Alaskan crab and more!

At 19:00 in the evening, we were amazed by the masterful carving of a whole salmon and tuna weighing 30 kg by the chefs! What an impressive deal this was! Of course, we headed straight for the freshest slices of sashimi before we stuffed ourselves silly at the build-your-own seafood taco station, featuring exquisite Peruvian-spiced Hokkaido scallops and Southeast Asian-spiced Hamachi, complete with plenty of refreshing side dishes. including avocado, crab meat, red radish, pickled jalapeño chili sauce, nacho cheese sauce.

Lobster roll fans shouldn’t miss the live station where you can watch the chefs build a Persimmon Boston Lobster roll! A pleasure to look at. After our fill of cold seafood, we moved on to the cooked repertoire, freshly baked whole salmon with salt, followed by prepared tiger prawns available in three flavours: Asian chilli, pineapple tamarind, herb broth. Those plump tiger prawns were absolutely delicious!

We then moved to the open-air section, where a chef served freshly grilled seafood on an outdoor charcoal grill: think succulent Creole Butter Bamboo Lobster, tender Yakiniku Tare Fresh King Prawn and more, elevated with the robust, smoky flavors of the charcoal.

Inside, there are two do-it-yourself noodle stations: seafood noodle bowl and cha soba, both offering a nutritious and comforting touch to your meal. Those who enjoy local flavors should make a stop at the seafood noodle station for luxurious seafood accompaniments like Boston Lobster, Hokkaido Scallop, Alaskan Crab and Sea Prawn, Laksa Gravy (a must-try), topped with a choice of Prawn Broth. and Clear Fishball Broth.

Next was the Asian section where we piled our plates with a satisfying selection of mud crabs and bamboo lobsters. Try crab cooked three ways (black pepper, ginger or Kam Heong) and bamboo lobster two ways (curry leaf, coconut-szechuan-spiced), crab meat fried rice with truffle egg white and baby abalone and more. Hum!

In the western section, seafood frikassée (a type of stew) was irresistible, Temasek sea bass in bitter orange cream sauce, Caribbean coconut mussels in curry and spicy chorizo, and pan-seared crustacean jambalaya, with an exceptionally appealing appearance. The best part? They tasted even better than they looked.

Indian people

Town Restaurant has always had an excellent Indian selection, this time focusing on seafood. We enjoyed the rich aromas and kick of spices from the Dried Masala, Red Snapper Butter Masala and Chettinad Prawn Curry. Pair these hearty dishes with Saffron Pulao Rice, Garlic Butter Naan or Papaduma!

It is a buffet experience worth taking the time to enjoy without rushing. The dazzling selection extends to the parmesan wheel serving charcuterie, seasoned cheeses (look out for the fresh honeycomb), artisan bread, a wide range of smoked fish, saffron lobster, Superfood Bar and Caesar Salad.

The party ends with a sweet grand finale. For a seafood buffet, we were amazed to see such an incredible array of desserts, from beautiful artisan pastries and cakes to Peranakan kueh.

Here, the creative chefs have other surprises up their sleeve; they have successfully extended the seafood theme to the dessert menu. Yes, you read that right! We were blown away by the chefs’ two new inventive desserts of the moment, brilliantly combining well-loved desserts with savory seafood elements.

Imagine ice cream crafted in liquid nitrogen before your eyes, then topped with caramel, salted walnuts, and…fish floss? Or chocolate egg yolk lava cake, served with chocolate sorbet and crowned with crispy fish skin? Although they may sound unusual and adventurous, we tried both creations and could confirm that the flavors and textures worked very well together. Definitely worth saving a spot for!
