Lean Salmon Tacos with Red Cabbage Cilantro Salad and Chipotle Sauce Recipe | Seafood

What happens when the Mediterranean meets Mexican cuisine?? This is an easy recipe for lean salmon tacos with kale and cilantro slaw and chipotle sauce! How delicious does this sound for an easy, healthy dinner?

Salmon fillets are seasoned with chili powder, ground cumin and oregano before baking until moist and flaky. Cabbage salad with shredded red cabbage, cilantro, green onions, chopped jalapenos, lime juice and mayonnaise. So simple and refreshing. Creamy Chipotle Sauce – Mayonnaise, sour cream, chipotle in adobo sauce, lime juice and garlic. Combine all these flavors and you have one delicious taco!

You can easily substitute leftover salmon in this fish taco recipe and cut down on the cooking time. If you don’t like salmon, try cod, redfish or tilapia instead. This delicious, flavorful 30-minute recipe will change the way you think about taco night.

Ingredients

  • salmon fillets (1-1 1/2 pounds)
  • 2 teaspoons of chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • olive oil

Red Cabbage Cilantro Salad

  • 2 cups finely chopped red cabbage
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, chopped
  • 1 tablespoon chopped jalapeño (optional)
  • 1 tablespoon lime juice
  • 2 tablespoons of mayonnaise

Chipotle sauce

To serve

  • taco shells or tortillas
  • lime wedges

How to do it:

  1. To make the salad, place the kale, cilantro, green onion and jalapeño in a bowl. Combine lime juice and mayonnaise. Season with salt and pepper. Add it to the kale mixture and toss to coat.
  2. Combine all ingredients in a blender to make the chipotle sauce. Pulse until smooth. Season with salt and pepper.
  3. To make the salmon, place it on a greased baking sheet. Brush with a little olive oil. Combine chili powder, cumin and oregano. Season the salmon with salt and pepper. Sprinkle with spices. Bake in a preheated 450 degree F oven for about 5-10 minutes depending on the thickness of the fish. Remove and cut into large pieces.
  4. To serve, fill taco shells or tortillas with some salmon, drizzle with slaw and chipotle sauce. Garnish with lime wedges.
