Salad… for breakfast? For some, the first reaction is a big “no way!” may be. However, when looking for a healthy breakfast idea for breakfast, a breakfast salad checks all the boxes.

What makes a breakfast salad?

First of all, it’s good morning fuel! Packed with fiber from leafy greens, lean protein from hummus, eggs and yogurt, and healthy fats from olive oil and avocado, this breakfast salad is delicious and a superfood that will keep you full until lunch.

Second, it comes together quickly! After packing lunch and snacks for the family, before breakfast, breakfast that comes together quickly and easily is essential. Cook a hard-boiled egg the week before or on a Sunday night, and this salad comes together in less than five minutes. Forgot to boil those eggs? Fry or fry the eggs over the salad in the same amount of time as it takes to make the rest.

What greens are good for breakfast?

Rich in fiber, the mighty green offers plenty of nutrients to start the day and will keep you full for longer. Baby spinach or kale are great options, but if you have mixed greens or chopped romaine, feel free to use them.
