Easy Po’Boy Sandwich Recipe with Okra and Shrimp
|I went to Tulane University, so I like a good boy! Since I no longer live in the Big Easy, I sometimes like to make recipes that give me a little taste of New Orleans. Today’s recipe is for Fried Okra and Shrimp Po’Boy and it sure is delicious. This is an easy to make sandwich with sautéed shrimp and lightly breaded okra on a bed of chopped butter lettuce and pickles.

Anyway, now that we’ve established how quick and easy lightly breaded okra will be, we’re ready to dive into the rest of this easy Shrimp Po’Boy Sandwich recipe.


Easy Po’Boy recipe with okra and prawns
While a traditional shrimp po’boy usually featured cornmeal fried shrimp, I’ve forgone that here since I’m using okra which offers the crunch of cornmeal. So no frying is needed for this poor boy sandwich recipe. This makes this recipe much easier and you can make it for your family, even on a weeknight.
Another time saver is that you don’t have to make a po’boy sauce because you can just coat in mayo. The lemon juice will be on the shrimp and the pickles will be layered on the bread instead of chopped into the tartar sauce. All the delicious flavors are there.


Ingredients:
- French baguette (cut into 6″ sections) or 4 Hoagie Rolls
- Fresh shrimp (shelled and deveined)
- Lemon
- Butter
- Olive oil
- Creole Seasoning (aka Cajun Seasoning)
- Pictsweet Farms® Lightly Breaded Seasoned Okra
- iceberg lettuce or butter lettuce, finely chopped
- Ripe tomato on the vine, thinly sliced
- Dill pickles or bread and butter pickles, in round slices or chips
- Mayonnaise
How to make a shrimp po’boy
The first step in this Shrimp Po’Boy Sandwich recipe is to get out your air fryer and preheat it. Then add Pictsweet Farms® Lightly Breaded Seasoned Okra to your air fryer and cook for 10 minutes.


While the okra cooks, you can quickly chop up the lettuce and tomatoes and place them on a plate.
Then you will cook the prawns. I like to quickly rinse the shrimp and pat them dry. In a skillet over medium-high heat, add the butter and olive oil. When it melts, add the prawns sprinkled with creole seasoning and cook for about 3-4 minutes on each side. Shrimp turn pink when fully cooked. Remove from the heat and pour over the juice of half a lemon.
Cut your crispy French bread in half lengthwise. I like to leave it hinged and not cut it completely. If desired, lightly toast in the oven for 3 minutes at 375 degrees F.


Now it’s time to assemble your po’boys.
Spread your roll on the plate. Go ahead and spread a thin layer of mayonnaise on top. Then, on the bottom piece of bread, add a layer of shredded lettuce followed by a layer of pickles and sliced tomatoes. Now add the prawns and pour in the lightly breaded okra. So! You have a tasty shrimp po’boy ready to serve.


What to serve with Shrimp Po’boy: It’s more traditional to enjoy with pot fries, but you can also serve it with fries. I also always like to serve with a bottle of hot sauce like Tabasco or Crystal Hot Sauce. Both have cayenne pepper and vinegar and are delicious on a shrimp po’ boy.

Easy to make shrimp po’boy. No frying required, but you still get all the delicious flavors you expect from this delicious sandwich.
Ingredients
- 1 French baguette cut into 6″ sections or 4 Hoagie rolls
- 1. 3 pounds. Peeled and deveined fresh shrimp
- 1 lemon, juice
- 1 tablespoon of butter
- 1 tablespoon extra virgin olive oil
- 1 teaspoon Creole seasoning (aka Cajun seasoning)
- 1 bag Pictsweet Farms® Lightly Breaded Seasoned Okra
- 1 cup iceberg lettuce or butter lettuce, finely chopped
- 1 ripe vine tomato, thinly sliced
- dill pickles or bread and butter pickles, in round slices or crisps
- 4 tablespoons mayonnaise
Instructions
- Preheat the Airfyer. Then add the Pictsweet Farms® Lightly Breaded Seasoned Okra to your air fryer. Cook for 10 minutes.
- While the okra cooks, cut the lettuce and tomatoes into slices and place them on a plate.
- In a skillet over medium-high heat, add the butter and olive oil. When it melts, add the prawns sprinkled with creole seasoning and cook for about 3-4 minutes on each side. Shrimp turn pink when fully cooked. Remove from the heat and pour over the fresh lemon juice.
- Cut the French bread in half lengthwise, leave it hinged if desired. Give it a light toast in the oven for 3 minutes at 375 degrees F (optional).
- Assemble the po’boys. Spread the bread on the plate. Spread a layer of mayonnaise on top. Then, on the bottom piece of bread, add a layer of shredded lettuce followed by a layer of pickles and sliced tomatoes. Now add the prawns and pour in the lightly breaded okra.
- Serve and enjoy!
