This bread cube steak recipe (breaded steak) is a Puerto Rican staple, and it’s easy and healthy to make in the air fryer!

Cubed beef steak is an inexpensive cut of meat used in country steak fries (I have that recipe in Skinnytaste Air Fryer Dinners). Tommy grew up on this dish, which is now in our dinner rotation. Last year I started making cube steak bread in the air fryer, and we all loved it. It’s crispy golden perfection, and now we wouldn’t eat it any other way! You might not think of breading thin steaks, but in many Latin countries, fried steaks (breaded steak), as the chicken cutlets are very popular. It’s a delicious way to take a cheap cut of beef and make it tasty.
What is Cube Steak?
Cube steak or cube steak is an inexpensive cut of beef that has been tenderized, usually the top loin or top. It is tenderized and flattened by pounding it with a meat tenderizer. The name refers to the shape of the notch left. This is also the meat used in the American dish of chicken fried steak. I personally like to re-tender it at home with a meat mallet so it’s really tender.
Steak Cube Bread Ingredients
- Cube steak: Buy a 16-ounce steak cube, also called a steak cube or round beef tenderloin, that you can tenderize yourself.
- Eggs: Beat three eggs with a spoon the water.
- Salt to season the beef.
- Crumbed bread: I used breadcrumbs, but if you have regular breadcrumbs, you can add spices like onion powder, garlic powder, and smoked paprika.
- Olive oil spray to wet the cow
How long to air fry bread cubed steak
- After salting the meat, add it to the egg mixture and then to the breadcrumbs. Use a fork to stick the crumbs on top of the meat.
- Brush the top of the steak with oil and air fry at 400°F for five minutes. Stir the steak, brush the other sides with oil and cook for another five minutes.
What to serve steak with cube bread
I like to serve these steak cubes with rice and beans and a salad or a slice of avocado. I always have sofrito in the freezer, so Puerto Rican rice and beans are a staple in my house, but any version will work, like Black Beans and Rice or Dominican Beans.
How to store steak cubes
The steak will keep in the fridge for up to 4 days. It is best to heat it in an air fryer so that the bread is crispy.

- Season the beef on both sides with salt.
Beat the eggs in a shallow bowl with the water.
Dip the beef in the egg, then in the breadcrumbs, beating with the back of a fork to stick.
Transfer to the air fryer basket in batches, if necessary.
Spray the top of the meat with oil and air fry at 400F in a single layer for 5 minutes on each side, tossing the other side when you flip. Serve with rice and lemon wedges, if desired.
