10 delicious recipes in honor of National Chicken Month!

Clock, clock, clock. Do you have poultry? Folks, September is National Chicken Month and it’s time to honor this tasty and versatile food that is a favorite among pollotarians! Wait, what exactly is a pollotarian? Well, I’m glad you ask! According to Urban Dictionary, it is someone who will not eat red meat. They basically stick to a diet of chicken, turkey and other poultry. Yes, ultimately they are omnivores like many of us; pollotarian is just a nicer term for lovers of all things chicken. And I am one of them. Not quite a pollotarian as I live on a healthy diet of bacon and bologna in addition to chicken, but I love all things chicken. Essentially, I try to stick to five main food groups: chicken, fried chicken, bacon-wrapped chicken, chicken pot pie, and buffalo wings. Great diet, huh? PS I don’t discriminate against my chicken — breast, leg, wing, guts, bring it on. I eat it whether it’s roasted, grilled or fried. I don’t care how it’s prepared. And who says chicken is boring and boring, well, I guess she are bland and boring, so there! But enough about me, let’s take a look at some delicious chicken recipes!

Chicken Pot Pie – Comfort food at its best! This here is chicken pot pie for the soul! Fall and winter, we’ll be there for you in no time! Cook this for your family and they will sing your praises. Marie Callend-Who?

Chicken with rice – Fun fact of the day: This was Ricky Ricardo’s favorite dish. Lucy would make it for him on special occasions (Lucy, you got some ‘splainin’ to do). When chicken and rice come together, you know your taste buds are being spoiled! Swoon-swoon!

Southern Fried Chicken – What the world needs now is love, dear love, it’s the one thing there’s just not enough of. Plan B: What I think the world really needs is some Southern fried chicken. Talk about love with every bite. Salty and crunchy on the outside, juicy and tender on the inside.


Restaurant style buffalo chicken wings – Have I told you lately how much I love Buffalo wings? Oh, did I mention it before? Forgive me please. Y’all, these Buffalo wings are bursting with flavor! Delicious with a capital D! And guess what — just in time for football season!

Buffalo Chicken Enchiladas – Do you already feel the gnawing hunger? No? Well, it’s about to kick into high gear now! Hold on, folks, because this right here is a humdinger of a recipe! Buffalo wings, buffalo wing sauce, enchilada sauce, cheese, cilantro, and tortilla, all marinated together, creating tangy, mealy, tangy perfection. #HolyMoly #ImSoHungry

Bacon Wrapped Jalapeno Chicken Bites – I know, I’ve become too predictable, but sometimes predictable is good. You can always count on me for your bacon fix! If you need a little pick-me-up, check out my articles. You’re sure to find something wrapped in bacon in each of my posts. These snacks are insanely delicious! Forget pigs-in-a-blanket, we want chicks in a blanket!

Homemade Chicken Cheesesteaks – I’ll go with the last idea and say you can always count on me for something cheesy too! I mean, anything tastes better wrapped in bacon and/or soaked in melted cheese. This cheesesteak is no different. The white cheddar cheese sauce in this sandwich is out of this world! If you’re going to drool, now’s the time!

Chicken Tacos – Mexican food tonight? Enchiladas or tacos? What about both?! Call the family and get the assembly going! These chicken tacos are a must! Crunchy, meaty, cheesy, greasy and, best of all, homemade! Everything you want in a taco and more!

Caprese Grilled Chicken – First, it is grilled, not fried. However, it is topped with cheese. We are making progress. Baby steps. Caprese salad and grilled chicken topped with balsamic reduction sauce; a delicious, healthy and hearty dish indeed!

BBQ Chicken Pizza – Ready for the challenge? We’re going to try to duplicate CPK’s famous BBQ Chicken Pizza. If you have a soft spot for pizza (like someone hiding behind this screen), I suggest you call some friends over for a pizza party! Make sure you save some leftovers for me. I like cold pizza… oh, and hot pizza. You can do the prep work. I just eat it to make sure it’s suitable for your guests.
